Our first CSA haul!

Today we picked up our first CSA box from Whistling Train Farm, and if this is any indication of things to come, we’re going to be eating really well this summer!
Two kinds of onions, shelling peas, pea shoots, beet greens, salad greens…I think that’s it for this week.
Off to go make a ham omelet with peas and onions!

Oh I'm so excited for you guys. You are going to LOVE this. Pea shoots are one of my absolute favorites. They can get tough in some of the stalks so be sure to trim any toughies out. They're really fantastic as a salad w/ vinaigrette and radishes. Let me know if you ever need recipe ideas. This is my 4th year doing a CSA, so I'm pretty used to figuring out what to do with random veggies. Enjoy!
Ahh! I'm so jealous. I wanted to find a csa, but it turns out they don't exist anywhere near me in AR... sigh. looks beautiful!
